Greek Gaspacho

1 tomato
1/2 cucumber, sliced
1 tsp olive oil
2 cubes feta cheese
2 sprigs parsley
1 Kalamata olive
salt and pepper to taste

1. Grate one tomato using a cheese grater. 
2. mix in olive oil and sliced cucumber.
3. top with feta, parsley, and Kalamata olive.

Makes 1 serving.
