Italian Classic Salad

1 cup arugula lettuce
1 medium tomato
1 slice firm silken tofu
pepper to taste
1. Dice the tomato and cut the tofu into pieces.
2. Combine ingredients and pepper to taste. 

Makes 1 serving. 
The silken tofu is used as a replacement for mozzarella, giving you zero Bad Fat and fewer calories.
