Mushroom and Olive White Spaghetti

8 oz spaghetti noodles
1 cup shiitake mushrooms
1 cup Niçoise olives (use Gaeta or Kalamata as substitute)
4 tbsp grated pecorino cheese
1 tsp minced garlic
pepper to taste
1. In a large pot, boil spaghetti until fully cooked (about 12 minutes). Drain and set aside.
2. Sautée the olives, mushrooms, and garlic in a separate pan.
3. Combine sautéed ingredients with noodles. Add pecorino cheese and pepper to taste.

Makes 4, 1 cup servings.
