Peanut Stir Fry

8oz Udon noodles
1 tbsp chopped onion
1/2 green pepper, chopped
1/2 cup sliced mushrooms
1 tbsp sesame seed oil

Peanut Sauce
1 tbsp soy sauce
1 tbsp peanut butter
1 tsp honey
1 tsp ginger (fresh or powdered)
1 tsp minced garlic
1/4 vegetable stock
1. Prepare udon noodles and set aside.
2. Sautée onions, mushrooms, and green pepper in sesame oil. 
3. Prepare peanut sauce: combine soy sauce, peanut butter, and honey. Add vegetable stock, ginger, and garlic. 
4. Combine noodles with sautéed vegetables and mx in peanut sauce. Stir thoroughly and serve.

Makes 4 servings.
