Simply Shredded Carrot Salad

3/4 cup shredded carrots
1 tbsp orange juice
2 tbsp light vinegar (like red wine or apple cider)
1/2 tbsp olive oil
pepper to taste
Mix orange juice, vinegar, olive oil, and pepper in a small dish. Once well incorporated, toss into shredded carrots. Dress with parsley for a fancier look.

 Makes 1 Serving
