Stuffed Tomato

1 tomato
1/4 cup ground turkey breast, cooked
1 tbsp onion, chopped
1 tbsp bread crumbs
1 large mushroom, chopped
1 tbsp tomato paste
1 tsp garlic
1 tsp olive oil
1 tsp parsley
pepper to taste
1. Preheat oven to 350 degrees Fahrenheit. 
2. Carve out tomato.
3. In a small bowl, mix together cooked turkey, onion, bread crumbs, mushroom, tomato paste, garlic, olive oil, parsley and pepper. Make sure all ingredients are fully incorporated.
4. Stuff tomato.
5. Place on a baking sheet and bake for 45 minutes.

Makes 1 serving.
