Fourth of July Cheesecake

As Fourth of July approaches, it’s time to think about what’s on the menu! 

 If Cheesecake is  on yours, Bon'App suggests:
  • Make your own Cheesecake instead of having a store-bought one.
  • Have half a slice of Cheesecake instead of a whole slice.
See what a difference it makes to have half a slice instead of a whole slice of Cheesecake (see delicious recipe below!):

       1 Slice of Cheesecake                               1/2 Slice of Cheesecake

Below is the delicious recipe adapted from Martha Stewart:
  • 5 tablespoons unsalted butter
  • 12 graham crackers (3 x 5 inch pieces)
  • ¼ cup sugar
  • ¼ teaspoon salt
  • 2 8-ounce packages of cream cheese
  • 1 ½ cup sugar
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • 4 eggs
  • 1 cup sour cream
Preheat oven to 375 degrees.
Butter a 9 x 3 inch springform pan.
Crush graham crackers and melt butter.
Combine graham cracker crumbs, melted butter, sugar, and salt; mix.
Press mixture into bottom of pan and 1 inch up the sides.
Bake 12 -15 minutes and let cool.

Beat cream cheese until fluffy, gradually add sugar and beat until fluffy, and beat in lemon zest, lemon juice, salt, eggs (one at a time), and sour cream.

Set oven to 325 degrees.  Wrap bottom of springform pan in foil.  Pour filling into crust and put in a roasting pan.  Pour boiling water to come half way up the springform pan.  Bake for 1 hour and 45 minutes.  Remove springform pan from water and let cool 20 minutes.
