Below is the
delicious recipe adapted from Martha Stewart:
Ingredients:
Crust:
- 5 tablespoons unsalted butter
- 12 graham crackers (3 x 5 inch pieces)
- ¼ cup sugar
- ¼ teaspoon salt
- 2 8-ounce packages of cream cheese
- 1 ½ cup sugar
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- ½ teaspoon salt
- 4 eggs
- 1 cup sour cream
Directions:
Preheat oven to 375 degrees.
Butter a 9 x 3 inch springform pan.
Crush graham crackers and melt butter.
Combine graham cracker crumbs, melted butter, sugar, and
salt; mix.
Press mixture into bottom of pan and 1 inch up the sides.
Bake 12 -15 minutes and let cool.
Beat cream cheese until fluffy, gradually add sugar and beat
until fluffy, and beat in lemon zest, lemon juice, salt, eggs (one at a time),
and sour cream.
Set oven to 325 degrees. Wrap bottom of springform pan in foil. Pour filling into crust and put in a roasting pan. Pour boiling water to come half way up
the springform pan. Bake for 1
hour and 45 minutes. Remove springform
pan from water and let cool 20 minutes.
